I LOVE seeing and hearing about moments of massive change in people when they’ve taken life into their own hands.

 💪 My Fitness Transformation

⚖️ 12 Months to back to health

Okay, what did I do…

  • Started to prioritise my health

  • Focussed on nutrient dense whole-foods

  • Started to walk - then run, then ran some more

  • Increased my distance by ~10% weekly

  • Introduced “Reset Days” to relax my diet and enjoy food spontaneously

  • Focussed on sleep - I set an alarm for bedtime - not for the morning!

  • Had dates in the diary for races and fitness goals to focus on

  • Started to appreciate my body more

  • Tracked my running fitness and celebrated progress

  • I took ice baths / cold showers every single morning - to strengthen my discipline

🏃‍♂️ Getting back after it

After a few injuries during my running which derailed my progress - I got frustrated and slipped back into old ways. I gained some weight back and lost my momentum.

So, this year - I’m back to it.

Hence sharing this story - and I will regularly include my personal updates and share stories from my time on the trails!

 🥞 Easy Banana Pancakes Recipe

Time: 10-15 mins     Serves: 10 Pancakes

 100% Plant based | Gluten Free Option | Oil Free | Nut Free Option

Alright, pancakes are a staple in the Wild household and we cannot get enough of this recipe!

It’s simple & easy to put together, no fuss frying - we never have to sacrifice the first one with this mix…

It’s our weekend go-to for those lazier days. Our kids lap these up, covered in maple, peanut butter or smashed banana / raspberries.

We sprinkle on crushed pecans and hemp seeds for the win!

Fluffy, soft and tasty vegan banana pancakes. So easy to make in a blender with simple healthy whole-food ingredients.

🧑🏼‍🍳 Ingredients

·       2 medium ripe banana 

·       2 cups rolled oats (we use gluten free)

·       1/4 cup pure maple syrup

·       1 1/4 cup oat milk or any plant-based milk

·       1 tbsp apple cider vinegar

·       2 tsp baking powder

·       2 tsp vanilla extract

·       1/2 tsp ground cinnamon

·       1/2 tsp pink Himalayan salt

🖊️ Instructions

1.              Add all ingredients to a high speed blender. Blend until the batter is completely smooth. The batter should resemble a thick smoothie and pour easily. It should not be thin and runny, or too thick to pour. 

2.              Let the batter rest undisturbed for about 10 minutes while you clean up (this will thicken a little more as it sits) If needed add more milk to smooth.

3.              Heat up a pan over med-low heat, grease pan with coconut oil (or skip if you are oil-free and you have a trusty non-stick pan).

4.              Cook for about 2-3 minutes, flipping when there are holes on the surface of the pancake and the other side is golden brown and firm enough for the spatula to get underneath. Then, cook the other side.

5.              Serve with desired toppings- We went for crushed pecans, maple syrup raspberries, strawberry hearts & a dusting of cinnamon.

💭  Thoughts

If the batter seems too thick- add a splash of milk and blend again until it thins out. If it seems to thin, add 1 tbsp of rolled oats and blend until it thickens.

Also, 1 Cup oats / 1 Cup plain flour works REALLY well - if you don’t mind the gluten!
